I am here to tell you that the best match in the world is bacon and eggs. Add some cream, grated cheese and puff pastry and you have some amazing little canapes/breakfast quiches ready at your disposal in minutes! I often make a big batch of these and freeze them so the kids can then take them for lunch. They are super tasty and are often the first things that go when I take them to a party! Let's go:
You will need:
5 Eggs beaten
200ml cream mixed into the eggs
1 onion finely chopped
4 rashers of bacon cut up finely (or one of those packets of bacon bits from the supermarket - see, I told you, this is the easiest recipe ever)
3 sheets of frozen puff pastry thawed
grated cheese (I use the Aldi three cheese blend of cheddar, mozzarella and parmesan)
salt and pepper
Preheat the oven to 180 Celcius. Cook the onion and bacon in a pan and combine the eggs and cream, salt and pepper in a jug. Cut out 12 round holes of pastry and fit into a mini muffin tray (after you have sprayed it with oil spray). Place a teaspoon of the bacon and onion mix into each pastry cup.
Pour the egg and cream mixture over the bacon and onion and top with some grated cheese.
Place in the oven and cook for 25 minutes. Take out of the oven and before they cool, run a knife around the edges and lift out onto a wire rack. Repeat for the remaining ingredients.
