Chicken Schnitzel Bake

I'm going to call this dish "Clean Out Your Fridge Chicken Schnitzel Bake". It doesn't look like the prettiest dish in the world but I tell you, the flavours are amazing. Plus, I managed to use up all of those opened bottles of half used sauces that needed using, and some leftover antipasti ingredients that we had opened after entertaining the weekend before. It was perfect!

When we have a late night sport activity during the week (which seems to be every night at the moment 😬🤦‍♀️) our go to fast meal is chicken schnitzels and salad. It can be whipped up in minutes and devoured even quicker. One such night I found myself with some spare time in the kitchen so I decided to spice things up a bit! I rummaged around the fridge and pulled out all of the things that needed using. It was amazing what was tucked at the back!

Here we have some leftover pasta sauce, cherry tomatoes, sundried tomato strips, homemade tomato and chilli jam, roasted capsicum strips, pizza sauce, sundried tomato and balsamic dip and some processed cheese slices (very gourmet I know). I also had some marinated olives from the deli (Charlie takes these to school most days) and a packet of prosciutto that kept falling out whenever I pulled the butter out so that was a goner too 😆. By all means, choose your own adventure here and pick out the ingredients that you wish to use and eat!


I started by frying the prosciutto in a little bit of olive oil and then I cooked the schnitzels. I then added garlic and onion to the pan and softened these down. I sprinkled in some mixed herbs and then added all of the above ingredients in no apparent order! Let it bubble and simmer away and then assemble your dish. Preheat the oven to 180 degrees and spray a baking dish with olive oil (helps to clean it later) and layer in your schnitzels. You may want to cut them down to size here. Pour your sauce ingredients over the top and layer with cheese. Top with the cooked prosciutto and bake in a moderate oven for 25 minutes.


I served ours with veggies but you can make your own chips or wedges, if you have the time, and serve these with a salad. It really is a delicious dish that makes you clean out your fridge!
