Jam Donut Slice

I have three words for you people. Jam. Donut. Slice. When you have a craving for jam donuts and you can’t be bothered leaving the house, this slice will hit the spot and tick all of those donut boxes.

It has been four weeks since my last blog post (golly I sound like I am at confession!). Things have been rather hectic around here and I have been struck down with a respiratory infection plus bronchitis. I just can’t seem to shake it so four lots of antibiotics later I am hoping this will be the last of it!!


Our ewes have started lambing and we have received some much needed rain. Things are certainly looking greener but we do need more rain to keep the grass growing. The days are still warm which is a bonus but it won’t be long until the first frost arrives! I love this time of year and really can’t complain about the weather. I am loving the glorious sunshine during the day and the cooler temperatures at night. The little lambs are thriving and so far we haven’t lost too many to the cold conditions. Yay!

So I had this idea one day when I was looking for something quick and easy to make for smoko. We were pregnancy scanning 600 ewes and I didn’t have much time to bake. All the ingredients are pantry staples and it honestly takes longer for your oven to heat up than it does to make the batter and put it together!


Mix self-raising flour, sugar and baking powder in a bowl. Stir in eggs, melted butter, milk and vanilla. You don’t even need to beat it. Pour half of the batter into a 24cm by 24cm square pan and sprinkle cinnamon sugar over the top and dollop with your favourite jam. Pour the remainder of the batter over the top of the jam and smooth it over as gently as you can.



Bake in a 180 degree oven for 25 minutes and let it rest while you make the icing. Again, all the quantities are available in the printable recipe.


Naked Jam Donut Slice

Once the slice has cooled down you are able to ice it. I used one cup of icing sugar sifted with 2 tablespoons of cocoa powder. I added 20 grams of melted butter and 1 tablespoon of hot water.

Refrigerate for about an hour and then devour!


Not so Naked Jam Donut Slice

I used raspberry jam in my slice but use whatever jam takes your fancy. You can change up the colour of the icing too and remove the cocoa and add in some colour. I will tell you what is also awesome to use as the icing. DONUT icing from Spotlight. Be warned though it hardens really really quickly (and you may struggle to get your sprinkles on before it sets hard!). It does taste delicious and goes all glossy and shiny but this icing works as well.
